"Proteinsallad"

1 röd paprika
2 kokta ägg
1 riven morot
½ salladshuvud
1 burk bönor
½ påse veggo bitar á la kyckling
Hummus

Skär grönsakerna och äggen i bitar och blanda ihop alla ingredienserna. 
Servera med hummus.

Sen kan man kan välja vad som helst till. Jag gjorde två matlådor med pasta iblandat så det blev en pastasallad istället.
Eller så kan man ha sötpotatis med muskot.

Andra kolhydrater som passar bra till är cous-cous eller ris.

Vegetarisk Lasagne

Ingredienser och tillbehör:
1 paket färska lasagne plattor.
1 halvt paket spenat.
3-4 dl kokta röda linser.
3 dl grädde (beroende på hur stor lasagne)
Ost.
Ungssäker form.


  • Värm ugnen till 200C.
  • Koka linserna enligt förpackning. (Brukar vara dubbla mängden vatten och koka i tio minuter, eller tills vattnet är borta.) Värm upp spenaten så att man kan smeta ut den.
  • Lägg ett lager med lasagneplattor i formen. 
  • Läsgg sedan ett lager med linser. Ovan på linserna lägger man några skivor ost och häller över lite grädde.
  • Nytt lager med lasagneplattor. 
  • På lasagneplattan smetar man ut ett lager med spenat och har på ost och lite grädde.
  • Sedan fortsätter man varva spenat och linser på vart annat lager tills den blir så tjock som man vill ha den, men försök inte göra den för tjock.
  • Överst häller man på lite mer grädde än på de andra lagren och även mer ost så att det täcker hela lasagnen.
  • Grädda i ugnen c:a 20 min eller till lasagneplattorna är mjuka.

Recept på gratäng!

Tänkte lägga ut ett recept på gratäng (som kommer bli min middag så fort den är klar!)

1 Aubergin
1 10-15 potatisar (beroende på storlek)
200 gram veg färs
2 dl grädde
1 burk krossade tomater
riven ost

Skär aubergin i skivor och lägg ett lager i en ungssäker form. Varva tomater, färs, potatis och grädde, och lägg sedan ett lafer med aubergin ovanpå och strö på riven ost (bestäm själv hur mycket).
Sätt i ugnen på 175 grader till auberginen är klar (det här beror lite på hur tjocka skivor ni har skurit).

Nybakat

För att fly undan den västa solen (är lite röd, så nu är det inne som gäller), så bestämde jag mig för att baka "mealbars". Något annat bra namn kan jag inte komma på. Men de är fyllda med nötter, torkad frukt och allt nyttigt som kommer med dem, men samtidigt djävulskt goda, så man nästan tror det är godis.

Börja med att mortla (eller kör i mixern), blandade nötter och torkad frukt! Man kan köpa nötmix påsar på 150-200 gram, det fungerar alldeles utmärkt.



Blanda sedan i nästan en hel förpackning Hasselnötsmassa.

Här får ni se lite hur mycket nötter och bär ni har. Det får inte bli för mycket, men lagom mycket så att smeten inte rasar isär. Egentligen ska det vara jordnötssmör, och med jordnötssmör blir smaken mindre söt, är mer socker i hasselnötsmassa, men med en pojkvän som hatar jordnötter så får man göra så ibland!

Sedan har man i lite citronsaft, och lägger det hela i en låg, lånpanna. Ni kan själva bestämma hur tjocka de ska vara.

Jag fick göra mina i en matlåda, för något annat fann jag inte, så mina kommer bli smala, på bredde, tjocka på höjden och halvlånga istället.



Sedan stoppar man dem i frysen, tills de har stelnat. Jag skulle säga att det är bättre att de är för hårda och måste tina, än att de är för mjuka och inte kan ätas utan att rasa  isär-

Vill man så kan man ringla choklad över, eller doppa dem i choklad när de är stelnade, och köra in dem i frysen en kort stund till.

Vegetarisk pastagratäng med "kyckling"

Nu tänkte jag dela med mig av mitt favorit recept för lunch.
Pastagratäng (eller Mac and Cheese som det tydligen heter i USA) är en av mina absoluta favorit pastarätter. Det och lasagne.

Idag tänkte jag göra en riktigt stor sats gratäng och göra lite matlådor. Måste ju äta upp det som finns i skafferiet nu så man inte står med enorma mängder mat när man ska ner till Växjö.

Vegetarisk pastagratäng med "kyckling" och chili
Ingredienser:
1/2 paket med Hälsans kök "Bitar á la kyckling" eller liknande
1 dl Valio Laktosfri matgrädde
1 chilifrukt av valfri sort
1-2 tsk jordnötssmör
Kokt pasta
Riven laktosfri ost (Kvibilles 12 månaders Cheddar är att föredra)

Sätt ugnen på 200 grader C.
Börja med att steka "kyckling"bitarna tills de är genomstekta (stektid står på förpackningen). Krydda gärna med Limepepper och örtsalt eller vanligt salt.
Sätt samtidigt på vattnet till pastan.
Tillsätt en hackad chilifrukt och grädde och låt puttra ett tag.
Häll pastan i vattnet och rör ut jordnötssmöret i kycklingröran.

När pastan är kokt (ta gärna av den lite före så att den inte blir mjuk och överkokt inne i ugnen) varvar man kycklingröra och pasta i en ungssäker form (jag brukar använda en lite högre pajform), riv över ost av valfritt slag och stoppa in i ugnen och vänta till osten smält och fått fin färg.

Vill man göra den mer "barnvänlig" kan man använda paprika istället för chili.

Självklart kan mitt recept göras med vanlig kyckling och "vanliga" mjölkprodukter.

Fredagsmys en torsdag och syltolycka!

Ja, sådär på en röd dag tyckte jag det var alldeles utomodentligt bra att ställa mej och baka en massa. 3 limpor, 9 bullar och 6 matmuffins blev det i olika framföranden, bland annat russinbröd, morotslimpa, och en del annat smått och gott.

Sen gjorde man också en jättesats med guacamole som man ska ha imorgon när det är kvällsmys med älsklingen som kommer över för helgen!

Så när allt sånt "viktigt" var klart tyckte jag att jag skulle få unna mig lite och gjorde iordning nam-nam! Dock råkade mitt golv ut för en syltolycka (och jag vet en ung herre som kommer dö av skratt när han får höra om återigen en syltolycka, dom har blivit frekvent återkommande sen vi blev tillsammans).

Men så fick jag iallafall iordning kvällens mums mat.

Recept?

Ja bara för att jag är såååååå snäll ;)

1 glas av valfritt slag (beror helt på hur mycket ni vill ha? Vinglas och dy. fungerar fint vid finare tillställningar eller fester, vanliga glas eller koppar, stora vid PMS är att föredra ;) )
2-3 skopor turkisk yoghurt
1-2 msk sylt
1 näve AXA multi chrush äppel & mandel müsli
ev honung att ringla över och russin

lägg turkisk yoghurt i botten på glaset (cirka 1 skopa), gör ett lager med 1-2 msk sylt av valfritt slag och en skopa yoghurt till. Ha på müslin och eventuellt honung. Vid ett lager till så lägg på en skopa till med yoghurt och även russin (men varning, det är sockerbomb på högnivå!).




Tja, så mycket mer får ni inte ikväll, måste hinna duscha också, för herrn önskar nog att jag inte har mjöl full håret imorgon när han kommer!

Some days...

Well, SJ has done it once again. At 17. something today I got a text from them telling me my 8.22 train till Stockholm is cancelled! I cant believe it! I should have guessed, everything was going to smoothly with the bastards this time, and BAM, now I'm fucked. I had to get a new ticket, three times as expensive, and an hour longer trip, this means I have to get an even earlier train from here! I'm so totally pissed of right now...

But...

Some days are just meant to bring good ideas!

In need of a dinner, without cooking something that will have left overs, open up new packages or anything that can be spoiled before Friday I came up with a brilliant idea...
As I have lots and lots of cheese and tomatoes, I decided to make stuffed tomatoes! How easy can it be? It's delicious and really simple to do!

Stuffed tomatoes- vego style

First, turn the oven on (about 150-175 degrees).
Hollow out the tomates (1 if eaten with a meal or used as appetizer, otherwise, your choice, but try and use large tomatoes, as it tends to be tricky to stuff them as they are small), at the same time as you fry some soy stuffing. Put cheddar or Parmesan or any other cheese with strong taste in the bottom. Add the soy filling and some Greek cheese and spice with Oregano.
Put them in the oven and voila! A really tasteful appetizer!

Road trip, Stroganoff and Friday

Well, then it was time again.
Off to Karlstad tonight, as I am off to Oslo for a leadership course tomorrow morning at 07.00.
Then back home on Sunday.
Next weekend, a new leadership course during a weekend in Sunne, and then 15th November my trips back and forth between Stockholm, Linköping and home will start, I don't really look forward to it that much to be honest.

Well, as I realized I have food that I can't leave or eat that will go bad till I get home on Sunday I decided to make a stroganoff for future lunchboxes. And as usual, the food is 100% vegetarian and lactose free.

Ingredients:
5 soy sausages
1 onion
3 dl of lactose free 10% cream
½ of low fat milk
3-4 dl of heinz chili sauce
3 tomatoes choped in small pieces

Chop the onion and sausages into pieces and fry them till they are cooked. Add the cream and the chili sauce until it's hot and then add the tomato pieces and milk.
Cook till tomatoes are soft and serve with rice.

A fun thing is that today I bought a new coat (looking a lot like one I have that is starting to break) and two pair of pants, so now I will have to make sure I go to the gym so that they will fit, as I think that if I gain weight they won't!

Well, it's time to go finish the packing and start reading books on children's language.

Recipe time! Leftover Minestrone

Thought it was time for a new recipe again. This recipe is a vegetarian Minestrone soup I made from leftovers. It's lactose free and completley meat free, but of course if you would like to use meat instead of soy and regular cremé fraishe, that is also possible.

After realising there was about nothing at all left in my fridge except this weeks leftover I decided to do a quick Minestrone soup.
The word Minestrone is Italian and means "The Big Soup" or well, the soup with loads of ingredients (think I heard that on Jamie Oliver's show once too...)

Ingredients:
2 cups of quorn or soy filling
1 onion
2-3 potatoes
1 cup of pasta or noodles
2 cups of red lentils (boiled)
1½ cup of Heinz chili sauce
2 cups of mixed beans and chick peas (this was made from tin packaged, but if you want they can be made by fresh ones too, but remember to put them in water and boil them at the right time before adding them)
4 table spoons of lactose free cremé fraische (for a more vegan alternative, use soy-yoghurt)
about 1 litre of water (thickness depends on your liking, the more water, the thinner soup)

If you go with fresh un-cooked food, the potatoes and lentils takes about 20 min each so keep that in mind.
Start by chopping the onion and fry it together with the soy/quorn in a casserole. Add the water and put the lentils and potatoes in and let boil for about 20 min. After 8-10 minutes, add the pasta (if using noodles, they cook in 3 minutes). When the potatoes and lentils are boiled, add the chili sauce and the cremé fraishe and add the beans. Mix it all together and take it of the stove.
Serve with a teaspoon of cremé fraiche and bread.

(Of course this works with prepared cooked food to, then there will be no cooking time to speak of... Just add the ingredients and let it simmer for a few minutes and it's ready to eat).

First time I made this, I had to little chili sauce and to little water, so it didn't look to appetizing, and for those who have seen "The young ones", it resembled Neil's lentil stew a lot, except with potatoes. But adding a bit more water and chili sauce made it get that orange Minestrone soup color I'm used to...

Next recipe will probably be my peanut-cookie ice cream cake. So look out for that one!

Lucky day and hot chocolate recipe!

Walking out the door this morning, it was cold! Absolutley freezing cold!

But that also put a smile on my face, finally, now you can put on scarves, gloves, hats, woolen caps, and lots of others accessories. My two faourite accessorie
s must be two of my scarves, one is a bright red enormous one made out of acrylics and my red and white palestina scarf.

Yesterday I also got the best present for my birthday (except for the Mr coming over for the weekend) and that was a big package of scrapping things! There were everything from stickers, to papers and envelopes, so now there will be scrapping going on!

scussion and have written two papers and the ideas for an oral presentation!
But at least I have the idea for some of the work. Well, now, no more school talk, I have a bad habit of doing that all the time I notice.

Been watching Citizen Kane now, and even though the story is not so fun, not really boring either, but for sure not catchy, the footage and the way they use the camera is brilliant, at least when you think of the fact it's made in 40's. I probably won't watch the film again though.

The story is simple (and I think I have seen modern films with this sto
ry too), it is the poor boy who is sent off to live with some rich man, and get brought up that way. Mr Kane becomes the number one chief executor on many of the famous news papers, but of course the most sold amount of papers in a day, is the one when he dies. He marries two famous women, and the whole idea with the film is that a group of movie makers is going to find out WHO Mr Kane really was, what did his last words "Rose Bud" mean? Whom was Charlie Kane deep inside? And the film plainly said, just his life story told by his old friends and family. A cute film, but with a tone of seriuosness and a dark side, how power makes people go crazy, think they can do anything, to anyone.

Also I met a friend today a quicky that I haven't seen in a while to get her some books I borrowed long ago! But then all I could think of was home, sleep, and football tonig

So after a hectic day at University, and no training as I don't want to pull my muscles again there will be a nice relaxing evening, with a book and big cup of hot chocolate and looking forward for the book fair in Gothenburg this weekend.

How to make your own delicious hot choclate that will make you soft in the edges. Both litterally and metaphorically.
This will be about 2-3 dl of hot chocolate (2 cups)
Ingredients:
1½ dl of milk
20-30 grams of dark chocolate
½ table spoon of cacao
2-3 dl of cream (some of it will get whipped)
Warm up 1½ dl of milk with some dark chocolate (the more you use, the thicker it gets, but just a few pieces is enough) and mix in half a spoon of cacao and half a dl of cream. The rest of the cream is preferably whipped and put in the cup just before drinking it. Alternativley you can make 1 dl of strong coffee, heat the milk and add the coffee and chocolate (if you like, add some grated almonds). Add the cream and put whipped cream in it when served. This will probably be 3 cups instead of two as you add the coffee, not switch it for something.

It makes any evening better than the day was. Also had the time to take some photos (as you see in the blogpost) edit them in Photoshop and put them here, will be sat fixing up the picasa web album in a bit too, but now, shower and 1408! See you tomorrow!

As I promised...

Well, as I promised. You well get my recipe for my toffee/caramel appel pie.

I usually don't have exact amount of everything as I do it according to how big the pie will be, but I will give it a try.

Put oven on 225 degrees C

Mix 2,5 dl of flour with 100 grams of butter and 1 dl of sugar (you can use brown sugar if you prefere that). You can also add some vanilla sugar if you like that (I use to do that if I can.
Make the batter smooth and let it rest in the refrigerator for 30 minutes.

While waiting peel 8-10 apples, depending on size and cut in pieces (you decide your self how big). Put only little water in a pot and add the apples and some cinnamon. Add about 1 dl of cream and 1 dl of syrup (may differ a bit, depending on how creamy you want it.

If the batter is done, put it in the baking tin and add the caramel/apple sauce o
n it (here you can choose yourself if you want to make it look like a real american apple pie or not. If you do, you might have to make some extra batter for the lid.
Put it in the oven till the batter is well done.

Serve with vanilla ice cream when the p
ie has cooled and the caramel has gotten creamy(ier).

And this is how my birthday cupcakes from yesterday looks likes! Yummy I'd say.
The icing is a lemon icing that are really great and can be used on almost anything. Just mix icing sugar and lemon juice together till it get thick, put it on the pastry and put it in the fridge for a w
hile and it will be awesome!

Speaking about awesome! My essay is now finnished and it looks freeeeaaaking awesome I think! Lots better than it did before I have to say...

Only thing is... My teacher are trying to convince me I don't know the swedish language.
In this example i have used the word medium... In SAOL this is the definition of 'Medium':

Essays and chocolate cakes!

Is sat trying to reason what the f**k a teacher is trying to tell me what to do. She has ordered sources on about every sentence of my essay, do I know absolutley nothing?
Am I really that stupid?
I guess so...

Okay, I tried one of the hardest subjects on earth I think, and it is really hard!

Well, anyway, only one day to my birthday! Woho!
And on friday the boyfriend is coming over to celebrate it. That will be kind of awesome!

The main thing then, will be my absolutley super yummy choclate cake made into birthday cupcakes with lemon icing!

You want the recipe? Well I thought so, so here it comes! The recipe is for one cake or 8-12 muffins (depending on size) and this is not for the faint hearted, it's not hard to do, but it takes some time so preparing the filling and the icing while it cools is a good idea!

Cake:
225 grams of butter
2,5 dl of brown sugar
2,5 dl of milk
100 grams of chocolate (preferably dark)
4 egg yolks
4 dl of flour
2 tablespoons of cacao
2 teaspoons of vanilla
1,5 teaspoon of baking powder
4 egg whites

Put the oven on 175 degrees Celcius (374 Farenheit). Put the butter and sugar in a bowl and mix it until it's smooth (could be done in a mixer). Heat the milk and the chocolate carefully while adding the egg yolks into the butter/sugar mix (could also be done in a mixer).
Put the dry ingredients in a bowl and add everyother with the milk and choclate sauce into the butter/sugar/yolk mix.
Whisk the egg whites hard and add in the cake batter.
Put it in a baking tin and let it bake for about 45 minutes (you can check if it is done by sticking a pin into it, if there is no cake batter on the pin, it is done). If you do muffins, it is important to remember to add the filling before the batter is put in the oven!

Filling:
2 tablespoons of strong coffee (i.e espresso)
50 grams of chocolate
75 grams of butter
1 dl of icing sugar

Melt the chocolate with the coffe while mixing the butter and icing sugar. Mix it together and split the cake in two, it is most important that the cake is cold before you put the filling on it, or it will run of the cake.

Icing (the original):

150 grams of chocolate
2 tablespoons of icing sugar
1 teaspoon of vanilla sugar
1,5 dl of creme fraiche

Melt the chocolate and add all the sugar. Add the creme fraiche bit by bit to a smooth mixture and put it on the cake. Add decorations after your own head.

P.S if you want the chocolate lemon cupcakes, instead of the icing you add 1 teaspoon of lemon/water with icing sugar (how much depends on how thick you want itm the more sugar, the thicker mixture) and put on the muffins when cold!
