Is sat trying to reason what the f**k a teacher is trying to tell me what to do. She has ordered sources on about every sentence of my essay, do I know absolutley nothing?
Am I really that stupid?
I guess so...
Okay, I tried one of the hardest subjects on earth I think, and it is really hard!
Well, anyway, only one day to my birthday! Woho!
And on friday the boyfriend is coming over to celebrate it. That will be kind of awesome!
The main thing then, will be my absolutley super yummy choclate cake made into birthday cupcakes with lemon icing!
You want the recipe? Well I thought so, so here it comes! The recipe is for one cake or 8-12 muffins (depending on size) and this is not for the faint hearted, it's not hard to do, but it takes some time so preparing the filling and the icing while it cools is a good idea!
Cake:
225 grams of butter
2,5 dl of brown sugar
2,5 dl of milk
100 grams of chocolate (preferably dark)
4 egg yolks
4 dl of flour
2 tablespoons of cacao
2 teaspoons of vanilla
1,5 teaspoon of baking powder
4 egg whites
Put the oven on 175 degrees Celcius (374 Farenheit). Put the butter and sugar in a bowl and mix it until it's smooth (could be done in a mixer). Heat the milk and the chocolate carefully while adding the egg yolks into the butter/sugar mix (could also be done in a mixer).
Put the dry ingredients in a bowl and add everyother with the milk and choclate sauce into the butter/sugar/yolk mix.
Whisk the egg whites hard and add in the cake batter.
Put it in a baking tin and let it bake for about 45 minutes (you can check if it is done by sticking a pin into it, if there is no cake batter on the pin, it is done). If you do muffins, it is important to remember to add the filling before the batter is put in the oven!
Filling:
2 tablespoons of strong coffee (i.e espresso)
50 grams of chocolate
75 grams of butter
1 dl of icing sugar
Melt the chocolate with the coffe while mixing the butter and icing sugar. Mix it together and split the cake in two, it is most important that the cake is cold before you put the filling on it, or it will run of the cake.
Icing (the original):
150 grams of chocolate
2 tablespoons of icing sugar
1 teaspoon of vanilla sugar
1,5 dl of creme fraiche
Melt the chocolate and add all the sugar. Add the creme fraiche bit by bit to a smooth mixture and put it on the cake. Add decorations after your own head.
P.S if you want the chocolate lemon cupcakes, instead of the icing you add 1 teaspoon of lemon/water with icing sugar (how much depends on how thick you want itm the more sugar, the thicker mixture) and put on the muffins when cold!
